I've opened a thread (https://discourse.linuxserver.io/t/docker-plex-image-doesnt-come-through/10550/2) over at linuxserver and they confirmed that the image was in fact up to date. So the issue apparently is not on their end. At this point I'm not sure if there is anything else that can be checked....
