I originally deleted jellyfin from the installation yaml (as instructed by you) as I had a seperate plex server running and didn't need it. How would I go about adidng it back in? What is the exact docker code I need to enter into the docker-compose yaml? Or should I not risk anything and install it in the docker-compose.custom yaml instead?

You can add it on either docker compose file. You can use the example config described here or look for one that suits your needs.
